Thanksgiving thoughts..

Couldn't be more stoked to see the family this Thanksgiving! The one holiday, mama demands the kids to all be home :) Not only would I hate to disappoint but, I'd shutter to think that there'd be one less family to take home her surplus of left-overs ;)

With all that said, she's absolutely thrilled that we're coming. I hadn't told her yet, but we're planning on making a few dishes when we get there. One, I've been dying to make (but will have to sit over-night) will be a creamy-basil cheese cake. (As seen on Giada at home)

The recipe calls for: 1 bushel (1/2 c) of sweet basil, 4 oz cream cheese, 3 oz goat cheese, 4 oz of ricotta, 1 egg + 1 egg yolk, 1 tbsp sugar, and 1 tsp salt. (PLUS Butter & olive oil sparingly)

Essentially: pulse all ingredients in a processor, set in an 8 oz round pan (OR springform pan if you want to get fancy) lined/ insulated by foil, place in another pan 1/8" full of water and bake 350 degrees for 45 minutes.

**Decorate w/ large assorted crackers. Et voila!
