1 tsp yeast, 1/2 tsp salt, 1/4 c sugar, 1 1/8th c warm water, 2 3/4 c bread flour.
Combine yeast, salt, sugar and warm water, stir w/ spoon until frothy.
Add flour cup at a time while kneading. Set in a quarter size amount of E.V.O.O. Roll around in oil until covered. Let rise for one hour or until doubled. (place over stove vent while preheating to catalyze growth)
Add a little flour to end product, fold gently w/out releasing air pockets. Place in bread pan, let sit for 10 min.
Bake @ 350 for 25-30 or until loaf is golden on top.
