Lunch break

Avocado, mixed greens and roasted garlic  tillamook cheese sandwich on local whole grain wheat bread.

And to drink: Banana, grapefruit, kale, and mixed greens with maca and chia seeds for protein.

Morning sushi?

Whomever thinks sushi for breakfast is a bad idea obviously has babyfood for poop. This was perfect and light as well!

I had a dream last night that I had raw crunchy spring rolls dipped in satay thai peanut sauce.

I think I'll make some tonight....

As for right now, I've made due with my crummy veggie rolls. *le sigh*

Day trip

To the coast. First stop, Sean's work. It has the best selfie mirror ever! Haha.We also stopped by the amazing Ruddick and Wood pub/ restaurant in Newberg.

It's an atypical hipster setting with an all-recycled wood decor and rustic feel. But an all in all comfortable social environment.

I had a nice "field green" salad and a savory housemade hazelnut buscuit. It was perfectly flaky and moist. Definately a new favorite.

Carrot curry soup

Carrot curry soup:
2 cups of chopped carrots
A medium onion yellow or red
4 cups veggie-chicken broth
1 cup rice/soy/almond milk
1 bushel of cilantro
2 tsp curry
1 cup  chopped cashews
1 tsp cayenne and Chile powder
+Vegan yogurt/ sour cream and additional cilantro to garnish.
**I also made naan bread and added a touch of sriracha for spicy.
You can also add a light chutney for extra flavor, if you're bold..

Left over cream cheese frosting...

Means more of a reason to surprise my loves w/ cinnamon rolls :D
I mean, who could let cream cheese frosting go to waste!?

WARNING: Definitely not a healthy treat!


1.) Melt in a saucepan:
 -3/4 c milk -1/2 c (stick butter)
2.) Mix/ Combine:
-2 1/4 c Flour -1/4 c sugar -1/2 tsp salt -1 1/4 packet dry yeast
3.) Add to dry:
- 1/4 c water + Milk/ Butter mixture
4.) Roll on floured board - Kneed until smooth - Cover w/ damp cloth (Let rise 10 min)
5.) Combine 1 stick butter, 1 tbsp cinnamon, 1 c brown sugar
6.) Roll dough into 9x13 in rectangle
- Spread brown sugar mixture onto dough rectangle 
-Roll and pinch shut ( I score the dough with a fork, making x's then add a little water+flour to seal. )
-Cut the roll ( 1/2 inch, if you can) 
-Set in a rectangle/ square pan so all rolls touch, let rise w/ damp cloth for 30 minutes.
**Bake @ 375 degrees F for 20 min!

** Top w/ your own cream cheese frosting. (I obviously used my left over carrot cake frosting)

Sweet amish bread :)

1 tsp yeast, 1/2 tsp salt, 1/4 c sugar, 1 1/8th c warm water, 2 3/4 c  bread flour. 
Combine yeast, salt, sugar and warm water, stir w/ spoon until frothy.
Add flour cup at a time while kneading. Set in a quarter size amount of E.V.O.O. Roll around in oil until covered. Let rise for one hour or until doubled. (place over stove vent while preheating to catalyze growth)
Add a little flour to end product, fold gently w/out releasing air pockets. Place in bread pan, let sit for 10 min.
Bake @ 350 for 25-30 or until loaf is golden on top.

Carrot Cup Cakes for my little Cupcake head :)

-4 Eggs
-1 1/4 c veggie oil
2 c sugar
2 c flour
2 tsp baking soda & powder
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 c chopped walnuts
3 c grated carrots
2 tsp vanilla extract

cream cheese frosting:
1/2-1/4 c butter
8-4 oz cream cheese
4-2 cups of confectioner's sugar
1 tsp vanilla extract

decided to make these little puppies this morning. luckily we had all the ingredients, it's a mess outside!
